Mmmm, delicious!
I love pork. It’s one of my favorite meats to cook and to eat. Why pork, you ask? Well here’s my answer in list format!
- It’s inexpensive. Per pound, a pork cut is far less expensive than a comparable beef cut.
- It’s meat is flavorful, yet it does a good job of absorbing the flavor of marinades and rubs.
- It’s versatile. I can buy an entire pork loin and make chops, a large roast, or thinly slice it into a curry or stir fry.
- It turns out nice and juicy when cooked well. Contrary to popular belief, pork doesn’t have to be cooked well-done. You can actually eat it on the rarer side and not worry about getting sick.
- It’s healthy(ish)! I’m not saying that people should go out an eat a pound of bacon or anything. However, many pork cuts are lean already or the fat can easily be trimmed or cooked off. Plus, eating fat doesn’t make you fat. Eating lots of calories will make you fat.
So, going along with my larb-inspire Thai salad, I decided to marinade some pork tenderloins.
VEGETARIAN NOTE: You can use this same marinade recipe for squash, zucchini, peppers, and eggplant!
